Indian Rice and Salads

Indian Rice

Ingredients:

  • 3 cups of Basmati rice
  • 1 soup spoon of butter
  • salt and pepper
  • 2 average sized onions
  • 1 soup spoon of powdered curry
  • 1 cup of peeled almons, roasted and chopped (or whole, according to taste)
  • 2/3 of a cup of black raisins
Preparation:
Sauté the onions in the butter to a nice golden color then add the rice. When it starts to fry add 6 cups of hot water, stir well and season with salt, a little pepper and the curry. Let it cook in a low boil and stir every so often. The rice should become lose and “al dente”. Then mix in the raisins but only add the almonds right before serving so they remain crispy.

 

Basic Salad Sauce

Ingredients:

  • Mixed greens
  • 3/4 cups of olive oil
  • 1/4 cup of honey
  • 1 tsp of salt
  • 1 tsp of sugar
  • 2 soup spoons of Himalaya Gourmet Lime Pickle or, in its absence, some lemon juice
Preparation:
Mix all the ingredients in a glass container or bowl. Cover and shake well or mix well in bowl. Marinate in the fridge. When the time comes to season the salad just mix the sauce well again before adding to the greens.

Yougurt Salad

Ingredients:

  • ¼ of large onion diced
  • 1 cup of yougurt
  • 1 pinch of cumin
  • 1 pinch of coarsely chopped cilantro to taste
Preparation:
Add the onion to the yougurt in a bowl, then add the cumin and cilantro. Stir a little and let it marinate in the fridge for at least one hour. The onion will lose its bite and become mild, even sweet.
