Ingredients:
- 1/4 L Tomato Paste
- 1/4 L Ground Pepper
- Salt to taste
- 10 ml Olive Oil
- 1 Large Onion
- 4 to 10 Cloves of Garlic
- 250 ml White Wine
- 1 Beer
- 1/2L of Water
- 1 Chouriço (Portuguese Sausage)
STEPS:
- Mix everything well in a blender (except chouriço and roast beef) and add to roast pan
- Make a cross-shaped cut on the Roast Beef and insert the frozen chouriço all the way across
- Roll Roast beef in the sauce inside the Roast Pan and insert in the oven pre-heated to 300-400 F
- After it is almost done take out of the oven and slice, then place back in the pan, cover with the sauce and put back in the oven for a few more minutes
- Serve with fries or mashed potatoes and steamed vegetables
The whole process should take roughly an hour and a half.
