Kraft Grilled Mushrooms and Eggplant
serves 3 or 4
Ingredients
- 1 purple eggplant, sliced into 1/4' slices
- 5 portobello mushrooms, with stalks removed
- 1/2 c. Kraft Signature salad dressing
- 1/2 c. herbed olive oil
- 1/2 c. herbed goat cheese
Directions
- Place eggplant slices and mushrooms, top down, on plate.
- Brush some Kraft salad dressing onto surface of each eggplant slice.
- Brush some herbed olive oil over mushrooms, then sprinkle herbed goat cheese on top.
- With BBQ on medium high heat, grill vegetables for a few minutes.
