Ingredients
- 2 medium beets
- 2 medium potatoes
- 3 medium carrots
- 1 onion (chopped)
- ¾ cup chick peas
- Handful of pickles ("Polski Ogorki" type, drained and chopped)
- Olive Oil (2-3 Tbsp or to taste.)
Preparation
- In a pot of water cook beets, potato and carrots together.
- When cooked remove, cool and peel.
- Cut beets, potatoes and carrots into small squares.
- Add onion, drained chick peas, salt, pepper.
- Add handful of pickles drained (or sauerkraut, drained).
- Add olive oil to taste.
