Spanakopita with Dora Giannadis

Ingredients

  • 1 box of phyllo pastry (Krinos)
  • 1 bag of spinach (chopped)
  • 1 cup chopped green onion
  • Olive oil
  • ½ lb Feta cheese
  • ½ lb Ricotta cheese
  • 1 egg
  • ½ cup fresh dill chopped
  • Salt (to taste)
  • Pepper (to taste)

Preparation

  1. In a bowl mix together spinach, green onion, feta, ricotta, egg, dill, salt and pepper.
  2. Take 2 sheets of phyllo pastry and cut into 3 even pieces (each piece, 2 sheets thick).
  3. Drizzle drops olive oil on each piece.
  4. Add a spoonful of the spinach filling on the phyllo and fold into triangles.
  5. Place in baking pan.
  6. Pre-heat to 325 degrees and cook for approximately 35 minutes until light golden brown.
