Ingredients

  • 1 oz Olive Oil
  • 1 oz Milk
  • 1/3 cup Flour
  • 1 slab Kefalotiri ¼ inch thick (can be found at Highland Farms)
  • 1oz Cognac
  • 2 Lemon wedges
  • Greek Pita Bread

 

Preparation

  1. Dip both sides of Kefalotiri cheese slab in milk, and then dip in flour.
  2. Add oil to frying pan. Turn heat to medium/high.
  3. Fry cheese (turning over once) until soft to the touch and golden brown on both sides.
  4. Add cognac and light (keep pan low and away from your face).
  5. Squeeze lemon wedge on to flaming pan.
  6. Wait until flames have evaporated.

 

Serve with toasted Greek Pita pieces
