Ingredients
- 1 cup flour
- 1 egg
- 1 ½ cup Water
- Salt (tiny pinch)
- 150 g Savoy Cabbage (Thinly sliced)
- 2 g Green Onion
- ¼ cup chopped Shrimp
- ¼ cup chopped Squid
- 1 ½ Tbsp. Vegetable Cooking Oil
Topping
- A few pieces of Dried Bonito (comes in a small plastic bag)
- Dried Seaweed (Nori) to taste. (comes in a small plastic bag)
- Pickled Red Ginger to taste
- Mayonnaise to taste
- Mustard to taste
Preparation
- Make the pancake batter by mixing flour, water and salt together until combined. Mix in cabbage, green onion, shrimp and squid.
- Preheat oil in pan and add a generous cup of the mixture. Flatten down and spread into a rough circle. Drop an egg into the middle of the pancake and sprinkle a pinch of red ginger over it.
- When the pancake has become sufficiently hard, flip the entire mixture over and press the top lightly with spatula.
- Allow the entire mixture to cook for about 5-7 minutes. Then turn over on to plate.
- Brush Okonomi sauce on top and sprinkle dried bonito, dried seaweed (nori). Dress with mayonnaise and mustard if you like. Finally add some pickled red ginger to the center.
- Repeat with remaining mixture.
