Ingredients
- Herring Filets (soak in water 1 hour)
- Any Sour Pickles (cut into match-sticks)
- 1 Onion finely chopped.
- Pickled Sweet Roasted Peppers (cut into match-sticks)
- Mustard
- Pepper.
- Toothpicks
Marinade
- 2 cups of water
- 4 tsp of Vinegar ( 4 tsp vinegar for every 2 cups of water)
- 1 Bay Leaf
- 1 tsp Capers
- ½ Carrot sliced
- ½ Onion (rings separated)
- Pinch of Salt (to taste)
- Pinch of Sugar (to taste)
Preparation
- Make the marinade first by combining the water, vinegar, bay leaf, capers, onion, carrot slices, salt and sugar in to a pot and boil for a couple of minutes. Let marinade completely cool.
- Lay the herring flat and spread thin layer of mustard. Sprinkle on a little pepper. At one end lay some pickles, sweet peppers, onion and start to roll like a jelly-roll. When you reach the end of the filet, secure with toothpicks.
- Submerse rolled filet in marinade. (Minimum 12 hours)
- Serve as appetizer with Vodka.
