Ingredients

  • 1cup bulgur wheat (medium or coarse grain)
  • 1 ¼ cup boiling water
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh mint
  • 1 cup diced cucumber
  • 1 cup diced tomato
  • ½ cup diced red onion
  • 2 cloves garlic, minced
  • ¼ cup fresh lemon juice
  • ¼ cup extra virgin olive oil or flax seed oil
  • 3 - 4 drips Tabasco Sauce (to taste)
  • salt (to taste)
  • pepper (to taste)

Preparation

  1. In a bowl pour boiling water over the bulgur and stir well. Set aside for 30 minutes, stirring occasionally, until water is completely absorbed and the bulgur is tender and soft.
  2. Add parsley, mint, tomato, red onion, cucumber to the bulgur.
  3. Mix together the dressing of lemon juice, oil, Tobasco sauce and garlic. Pour over bulgur and toss well.
  4. Tabouli is at its best when refrigerated and allow to stand for several hours.
