Ingredients
- 1cup bulgur wheat (medium or coarse grain)
- 1 ¼ cup boiling water
- ¼ cup chopped fresh parsley
- ¼ cup chopped fresh mint
- 1 cup diced cucumber
- 1 cup diced tomato
- ½ cup diced red onion
- 2 cloves garlic, minced
- ¼ cup fresh lemon juice
- ¼ cup extra virgin olive oil or flax seed oil
- 3 - 4 drips Tabasco Sauce (to taste)
- salt (to taste)
- pepper (to taste)
Preparation
- In a bowl pour boiling water over the bulgur and stir well. Set aside for 30 minutes, stirring occasionally, until water is completely absorbed and the bulgur is tender and soft.
- Add parsley, mint, tomato, red onion, cucumber to the bulgur.
- Mix together the dressing of lemon juice, oil, Tobasco sauce and garlic. Pour over bulgur and toss well.
- Tabouli is at its best when refrigerated and allow to stand for several hours.
