Ingredients
- 1 box Tri-colour Fusilli pasta
- 1 Salmon filet
- 2 cups pre-cooked shrimp
- 2 tbsp capers
- ½ cup black olives
- 1-2 tbsp parsley
- ¼ cup finely chopped garlic (use more or less garlic if you wish)
- 2 - 3 tbsp olive oil
Salmon Preparation
- Place salmon filet in a non-stick baking dish
- Drizzle oil over salmon
- Place (to taste) garlic cloves (cut in half) on top of salmon
- Squeeze the juice from ½ of a lemon.
- Place the other ½ lemon in slices on top of garlic and salmon.
- Bake in a preheated oven at 375 for 10 - 15 minutes until done. (Depending on thickness of salmon.)
- Remove salmon let stand for 5 minutes.
- Flake filet in to chunks and set aside.
Seafood Pasta Preparation
- Make tri-colour fusilli according to directions on the box.
- While the pasta is boiling prepare the following:
- In a sauce pan sweat the garlic and onions in olive oil until they are almost translucent. (The longer you cook garlic and onions the sweeter they become)
- Add shrimp, capers, olives and heat through
- Add flaked salmon
- In your serving dish place drained hot pasta. Add contents of sauce pan. Toss well and sprinkle with parsley.
