Ingredients
- Crisco Oil for deep frying
- 1 cup Chick Pea Flour
- 2 large Spanish Onion chopped length wise
- 1 medium eggplant thinly sliced (can use Spinach as an alternative)
- 1 tsp. lemon juice
- 2 tsp. salt
- ½ tsp. baking powder
- 1 cup water
Optional Additional Ingredients
- pinch garam masala
- pinch cumin
- pinch chili
- pinch ginger
- hot chili pepper (to taste)
- chopped coriander
Preparation
- Mix all ingredients until a cake-like batter is formed.
- Drop batter with large tablespoon into hot Crisco oil and cook until golden brown turning once.
- Place Pakora on a paper towel to drain.
