Ingredients
- 5 beets (boiled, peeled and shredded)
- 3 hard boiled eggs (diced)
- 1 cucumber (peeled and diced)
- 1 container of sour cream
- 1 container of kefir
- 1 bunch of green onions (chopped)
- 1 tsp of dill (chopped)
- 1 cup of water (room temperature)
Preparation
- In a bowl mix sour cream with kefir, then add beets, eggs, cucumber, green onions and dill.
- Keep stirring add water to make the mixture thinner.
- Serve it cold.
In Lithuanian, this soup is called “Saltibarsciai” with a little v on top the S and C letters
