Cold Beet Soup

Ingredients

  • 5 beets (boiled, peeled and shredded)
  • 3 hard boiled eggs (diced)
  • 1 cucumber (peeled and diced)
  • 1 container of sour cream
  • 1 container of kefir
  • 1 bunch of green onions (chopped)
  • 1 tsp of dill (chopped)
  • 1 cup of water (room temperature)

Preparation

  1. In a bowl mix sour cream with kefir, then add beets, eggs, cucumber, green onions and dill.
  2. Keep stirring add water to make the mixture thinner.
  3. Serve it cold.

In Lithuanian, this soup is called “Saltibarsciai” with a little v on top the S and C letters
