Chicken Cordon Bleu

Ingredients

  • 1 piece boneless skinless chicken breast
  • 1 slice havarti cheese
  • 1 slice regular or cooked ham
  • 6 eggs
  • 1/4 cup milk
  • 1 cup seasoned bread crumbs

Preparation

  1. "Butterfly" (fillet) the breast. Season the inside with salt and pepper. Brush oil on top.
  2. Place 1 slice cheese and 1 slice ham into centre of breast. Roll up the breast and place toothpick through the end to hold it in place.
  3. Mix eggs and milk to make an "eggwash".
  4. Thoroughly coat the rolled breast with eggwash, then coat with bread crumbs.
  5. Place into roasting pan. Drizzle with olive oil. Coat base of pan with oil. Cover. Cook in oven at 400 f. For approx. 45 mins to 1 hour. Make sure centre of breast is fully cooked.
