Stuffed Fillet of Sole

Ingredients
- 6 pieces fillet of sole
- 2 packages pre-cooked crab meat
- 2 cloves fresh garlic, chopped
- 1/4 cup olive oil
- 1/4 cup chopped parsley
- 1 tbsp. Lemon juice
- Pepper and salt to taste
- 1/2 cup white wine
Preparation
- In a bowl, shred crab meat. Add lemon juice, olive oil, garlic and parsley. Mix thoroughly. Add salt and pepper to taste.
- Lay out the fillet of sole on a flat surface, seasoning it lightly with salt and pepper. Place 3 tbsp. Of the seasoned crab stuffing into the centre of the fillet and roll it up. Weave a toothpick through the fillet to keep in place.
- Place it in a roasting pan. Pour 3/4 cup water into the pan and 1/2 cup white wine. Drizzle olive oil on top. Cover. Cook in oven at 400 degrees f. For approx. 30 to 40 minutes.
