Ingredients
- 300g of Boneless Salt Cod
- 4 large potatoes sliced or cut like French Fries
- 1 clove of Garlic
- Pepper (to taste)
- 1/2 cup White Wine
- 1/2 cup Olive Oil
- 1/2 cup Water
- 2 Buns
- 4 eggs
- Vegetable oil (enough to fry)
Preparation
- Cod must be soaked (re-hydrated) in a bowl of water overnight
- Remove from water, pat dry with paper towel.
- Flake the cod to a consistency of flaked tuna.
- Simmer ½ of onion and cod in olive oil.
- In a 2nd separate pan start frying the potatoes.
- Once partially fried mix them in with the simmering cod.
- Add wine and some water if needed so that mixture doesn’t stick.
- Add bread to 2nd pan and fry for a few minutes.
- Then add to potato and cod pan.
- Beat eggs then add to pan.
- Stir until eggs are ‘just’ cooked.
