Ingredients
- 4 Plantain Bananas
- 1 can Jack Fruit (found in “Imported Food” aisle of Highland Farms)
- Brown Sugar (about 1 Tbsp. per square of spring roll wrapper)
- 1 pkg of Spring Roll Wrappers (Found in freezer aisle. You will not need the entire package.Refrigerate leftovers for next time.)
- Oil for frying
Preparation
- Cut each banana both lengthwise and widthwise, making four pieces from each banana.
- Place one piece of banana and a strip of jack fruit on each square of spring-roll wrapper.
- Sprinkle a tablespoon of brown sugar over the fruits.
- Wrap like an envelope, sealing edges with water.
- Heat oil and fry the spring-rolls until golden brown.
Can serve alone, or with a scoop of Vanilla Ice Cream
