SEAFOOD FEAST & MUSHROOM SALAD
Seafood Feast:
- 10 tiger shrimps
- 10 white shrimps
- 4-5 large scallops
- 12 mussels
- Dried oregano & thyme
- White wine
- 4-5 garlic cloves finely chopped
- 1 onion chopped
- A bunch of chopped fresh parsley, chopped fresh dill & fresh bay leaves
- Soya sauce
- Hot chili oil
- Salt & Pepper
Mushroom Salad:
- 2 cups of wild mushrooms
- 1 bag of mixed greens
- Olive oil
- Balsamic Vinegar
- Flax seed oil
To prepare the seafood dish start by adding 2 tbsp of olive oil onto a large wok and heat it up without burning. Add the garlic, the onion, dried oregano and thyme and fry for a couple of minutes. Add 1/8 of a cup of water and ¼ cup of soy sauce. Mix well and cook for another minute. Add ½ tsp of hot chili oil and add the shrimps, scallops and mussels. Mix well. Add ¾ cup of white wine. Cover the wok and cook for about 10 minutes. Once the mussels are cooked, add another ¼ cup of white wine plus the parsley, dill and bay leaves. Let it simmer for a few minutes.
To prepare the salad add ½ tsp of olive oil onto a small pot. Toss in the mushrooms and start frying them over low to medium heat. Add ¼ tsp of balsamic vinegar, 1 tsp of chili olive oil and ½ tsp of soy sauce. Mix and fry the mushrooms until they are soft. Set aside. In a salad bowl serve a bed of greens, pour 1 tbsp of balsamic vinegar, 1 tsp of flax seed oil and pour the mushrooms on top.
Serve the Seafood Feast and the salad together and enjoy! Smacznego!
