BEEF PASTA SAUCE
- 5lb. roast beef cut into cubes
- 1 cup brewed espresso
- 1 28oz. can whole tomatoes with juice
- 1 750ml bottle of Chianti wine
- 3 red onions
- Butter
- Salt and pepper
Sprinkle the meat cubes with pepper. In a deep pot melt about 1 ½ tbsp of butter and add the beef. Slice the onions and set aside. Once the meat is brown, remove from the pot and set aside in a large bowl. Do not toss out the juice that is left in the pot. Add another 1 ½ tbsp of butter to the juice and once it melts, start cooking the onions. Add more pepper, the espresso coffee, the tomatoes and 1 cup of red wine. Mix everything well and cook for about a minute.
Pour back the beef onto the pot and cover with a lid. Cook the meat over medium heat for about half an hour or until the meat is tender and you can separate it easily with a fork. Remove the beef and shred the meat. Once all the meat is shredded, pour back onto the pot and mix well. Simmer for a couple of minutes. Pour the sauce over your favourite pasta, serve and enjoy.
