SZYSZKOBOBS & SPINACH SALAD
Szyszkobobs
- 1 Turkey breast cut into cubes
- 1 tbsp oregano
- 1 tbsp thyme
- 2 to 3 garlic cloves crushed
- ½ cup soya sauce
- 2-3 Tsp truffle oil
- Pepper
- 300 grams blue cheese
- 3/4 cup of organic natural yoghurt
Spinach Salad
- 1 bag spinach
- 1 orange
- ½ cup fresh blackberries
- ½ tsp balsamic orange glaze
- ½ cup soya sauce
- 1 avocado
- 1 tbsp grind ginger
- Pine nuts
- 1 tsp water
- Pepper & salt
Marinate overnight the turkey pieces in a mix of truffle oil, oregano, thyme, soya sauce, garlic and pepper. Insert the pieces in a skewer and place in the grill for a few minutes, making sure you turn them around so they cook evenly. Once they are cooked, set aside.
Crumble the blue cheese in a bowl and add the yogurt. Mix well until you obtain a nice creamy dip. Set aside.
Pour soya sauce onto a sauce pan, and then add the balsamic glaze, the ginger and the water. Cook over low to medium heat for a few minutes stirring constantly. Set the dressing aside.
Add the spinach to a large salad bowl and the fresh blackberries. Cut the orange in quarters and slice the avocado. Add to the salad. Sprinkle with pine nuts. Add salt & pepper to taste. Pour the dressing over the salad and toss gently.
Place the Szyszkobobs in a plate adding a spoonful of the blue cheese dip on the side. Serve some salad in a separate plate and enjoy! Smacznego!
