STUFFED MUSHROOMS
- 20 mushrooms
- 1 cup of cream cheese
- 1/3 blue cheese (about 120 grams)
- 2 tbsp mayonnaise
- Cracked pepper
Remove the stem from the mushrooms and with a spoon scoop out the inside of the mushroom leaving only the empty cap. Place the mushroom caps on a baking sheet and set aside.
Add the cream cheese to a large bowl and then shred the blue cheese on top of it. Add the mayonnaise (optional you can squeeze a few drops of lime juice) and some cracked pepper to taste. Mix everything together until all the ingredients have incorporated.
Add some cracked pepper inside each mushroom cap. Using a spoon, fill the caps with the cream cheese mixture and return to the baking sheet. Place in a pre-heated oven at 325 degrees for 30 minutes or until golden brown. Serve over a bed of green leaves.
