HUMMUS & GUACAMOLE SOBOLEWSKI STYLE

Hummus

  • 1 can of chickpeas
  • 2 garlic cloves squeezed
  • ½  tsp cumin
  • Juice of ½ lemon
  • 1 tsp sesame oil
  • 1/4 cup water
  • Salt & pepper

Guacamole

  • 3 avocados
  • ½ onion chopped
  • 2 garlic cloves shredded
  • 2 tsp chopped coriander
  • Juice of ½ lemon
  • Salt & pepper

To prepare the hummus, start by draining & rinsing the chick peas, then pour them into a blender. Add the garlic cloves, the water, lemon juice and the cumin. Blend everything together until you obtain a smooth paste. Pour onto a bowl and add the sesame oil. Mix again using a wooden spoon. Add salt & pepper to taste. Set aside. Cut the avocados in half and scoop out the flesh. Coat the remaining avocado skins using a few drops of lime juice and set aside. In a large bowl, add the avocado flesh, the onion, garlic, coriander, lemon juice and salt & pepper to taste. Mix everything together using a hand mixer, until you obtain a smooth paste. Fill the avocado skins with this mixture. Place the filled avocado skins on a large plate together with the hummus. Serve with crackers, toasted pita bread or bread sticks. Enjoy!
