PTYSIE WITH MUSHROOM
- 1 1/4 cup water
- 1/2 bar of margarine (125g)
- 1 cup flour
- 5 eggs
- 1/2 tbsp baking soda
- 2 onions
- 3 cups of mushrooms
- A bunch of fresh parsley
- 2 tbsp brad crumbs
- 1 tbsp olive oil
- Salt & pepper
In a deep pot melt the margarine with water. Add the flour and mix constantly with a wooden spoon until all ingredients are well combined. Fry it for about 4 minutes. Cool the dough. Add the eggs, one egg at a time, mixing with the spoon or in a food processor. Add the baking soda and continue mixing until you obtain uniform dough. Using a large tablespoon, drop single tablespoons of the dough over a non-stick cooking sheet leaving a couple of inches between each one. Once the cooking sheet is full, place it in a pre-heated oven at 350 degrees for about 40 minutes or until golden brown. While the bread is baking, chop the onions, the mushrooms and the parsley. Add the olive oil to a frying pan and start frying the mushrooms. After a couple of minutes add the onions and fry until all the vegetables are soft and golden brown. Add the parsley and the bread crumbs. Mix well then add salt & pepper to taste. Cook for a couple of minutes more. Set aside.
Once the bread (pastry) is ready, remove form the oven and set aside to cool. Cut the pastry at the bottom on one side. Fill with the mushrooms and place in a tray. Heat "ptysie" in the oven for about 15 minutes before serving. Serve and enjoy. Smacznego!
