BAKED FISH WITH VEGGIES
- 1/2 kg fish fillets
- 1/2kg carrots & broccoli (cooked and sliced)
- Juice of 1/2 lemon
- Salt
- Cracked pepper
- Olive oil
- Shredded cheddar cheese
- 3 tbsp sour cream
- 2 tbsp horseradish
Sprinkle the fish fillets with salt and cracked pepper to taste. Squeeze the lemon juice on top of the fish and a bit of olive oil. Cover the bottom of an oven-resistant Pyrex with the fish fillets. Cover the fillets with a layer of vegetables and set aside.
In a small bowl, combine the sour cream, the horseradish and 1 tbsp of shredded cheese. Mix well until you obtain the sauce. Pour it over the veggies. Add one more layer of shredded cheese and place in a pre heated oven at 350 degrees for 30 minutes. Serve over a bed of lettuce and enjoy! Smacznego
