Ice Cream Base

(For use with household ice cream makers)

Ingredients:

  • 1 qt. milk
  • 400 grams sugar
  • 1qt whipping cream
  • 12 yolks

Directions :

  1. Bring milk and sugar to a boil, then temper it with the egg yolks by pouring milk mixture in slowly while continuing to stir.
  2. Bring mixture to a simmer then pour through a strainer.
  3. Whisk in whipping cream and let it set overnight in an ice bath.
  4. Use with ice cream maker.
